My family enjoyed these Pork medallions a great deal. At first, I thought they might not, as not everyone is a fan of Sesame seeds.
But, this time, I got a thumbs-up from everyone! The meat was tender and with the crunchiness of the seeds, it was like biting into a small piece of heaven.
Pork fillet {tenderloin} is also a healthier option than any red meat and this being baked and not fried is a plus on the healthy side as well.
MUSTARD & SESAME SEED CRUSTED PORK
{enough for 6 - 8 persons}
1kg Pork Fillet, cut into 3cm medallions {tenderloin}
1/3 cup Dijon Mustard
2 Large Eggs, lightly beaten {in a small bowl}
1/2 cup Flour
2 - 3 TB Meat seasoning
1 cup Sesame Seeds, in a small bowl
1/3 cup Butter, melted
1.) Pre-heat the oven to 200 deg C (400 deg F) - line a baking sheet with baking paper.
2.) Rub the Mustard all over the Pork medallions.
3.) Mix the Flour and Meat seasoning in a small bowl.
4.) Dip the medallions first in the bowl with the Flour mixture - then in the Egg and lastly coat it with the Sesame seeds.
5.) Place in a single layer on the baking sheet - drizzle the melted Butter over - bake 25 - 30 minutes until done.
Serve with vegetables or salads and mashed potatoes or whole steamed baby potatoes.
